The upside-down meal is considered an ancient food, so there are many stories about its origin and the reason for its name. The first narration states that Palestine was the first country that knew maqluba, and they used to call it the eggplant, using the eggplant as the main ingredient in it. When the commander Salah al-Din al-Ayyubi conquered the city of Jerusalem, people celebrated this victory and presented the soldiers with a dish that Salah al-Din al-Ayyubi admired. And when he asked them by its name, he described it as upside down. This is because the custom of applying this dish is through its heart from the cooking pot to the trays. While this dish was called eggplant for a long time, but with the passage of time and the introduction of additional ingredients on top of the dish, it was called maqluba because the eggplant is placed at the bottom and some vegetables and rice on top, then the dish is stacked and turned on the other side, and meat and nuts are added. So this why its named maqluba.
